It is the intent of the team at Ohio River Valley Food Venture to provide our producers with a complete variety of high-quality equipment to meet their needs for a wide range of products. Our kitchen is set up with three main areas, a processing area, a prep area and a baking area.
The processing area includes 60-gallon and 40-gallon steam jacketed kettles, as well as a cabinet with 6-gallon and 10-gallon tilting kettles, a cook ‘n hold oven with a 300- pound meat capacity, work tables, a 6-burner gas range, and a double well deep fryer. Processed foods such as sauces and salsas can be pumped from the steam kettle to a bottle filler which features an automated bottling line.
The prep area includes a Robot Coupe R6V processor capable of processing hundreds of pounds of food per hour, a slicer with a mobile stand, and a 5-well hot holding table.
The baking area includes a proofer, two double-deck and one single-deck convection ovens, 60-quart and 20-quart vertical mixers, and a bakers’ table. We also feature a walk-in cooler and freezer, each of which measures about 20’ x 18’. We’ve built the “Kitchen of Dreams”. We invite you to come use it.
